An important part of the SELMI Bean to Bar range, the SELMI CONCA 100 completes the chocolate transformation process by removing the negative “acidity” together with any residual humidity. This maximises the quality of the finished product.
The new SELMI CONCA 100 features a greatly improved mixing system that uses an innovative inertial rotary system which, in addition to the usual rotation of the stirrer, adds a second, simultaneous orbital rotation. This method of conching produces a final product with incomparable aromatic notes.
The standard working cycle is usually 8 to 12 hours in order to oxygenate the chocolate and create an homogeneous and flawless mixture.
A touch screen enables the operator to control duration,
temperature, emulsion intensity & oxygenation via variable air flow. The SELMI CONCA 100 also enables custom processing programs to be saved if required.
