SOSA Powdered Glucose is dehydrated Glucose syrup that prevents crystallisation of sugars and helps stop products & preparations from drying out. It also provides elasticity and keeps products soft. 75g of Powdered Glucose is equivalent to 100g Liquid Glucose. Use in sorbet, ganache, mousse, pastries, icing and chocolates.
