SOSA Pro-Pannacotta - Iota
IOTA PRO PANNACOTTA is a vegetable gelling agent extracted from red algae (carrageenan E407) that creates soft, elastic gels ideal for puddings, mousses, and other delicate desserts. It functions as a gelling, thickening, stabilizing, and suspending agent with high water absorption capacity. Best used by dispersing in cold liquid and then heating, it gels upon cooling between 60–70°C.
