    SOSA Pro-Pannacotta - Iota

    IOTA PRO PANNACOTTA is a vegetable gelling agent extracted from red algae (carrageenan E407) that creates soft, elastic gels ideal for puddings, mousses, and other delicate desserts. It functions as a gelling, thickening, stabilizing, and suspending agent with high water absorption capacity. Best used by dispersing in cold liquid and then heating, it gels upon cooling between 60–70°C.

    • Function: Gelling, thickening, stabilizing, suspending agent

    • Ingredient: Carrageenan (E407)

    • Dosage: 2–15 g/kg

    • Applications: Puddings, panna cotta, mousses, other soft-set desserts

    • Properties: Soft, elastic texture; thermoreversible between 60–70°C; high water absorption; not freeze-stable; heat-resistant up to ~50°C

    • Use: Mix with cold liquid, heat to boiling while stirring. Do not pour liquid over powder.
