Description
SOSA Metilgel is gelling agent made from Methylcellulose derived from the cellulose of vegetables.
It jellifies when heat is added as opposed to all the others jellify when cold is applied. It is very practical for aerating and emulsifying which helps when making warm foams. If it is not heated it can act as a thickener. It also resists freezing. To use, hydrate in cold let stand until the mixture reaches 4°C and apply heat. Use for Airs, Foams, Gnocchi, Spaghetti, Aggluntinations.
Suggested Dosage: Hot: 15g/kg (foam effect), 30g/kg (agglutinated), Cold: 20g/kg (thickener), 20g/kg (gelling agent)
