SOSA Powdered Citric Acid is used for a wide range of applications for example, adding balance to flavour (use in place of Lemon Juice) or creating a 'zingy' mouth feel. It also increases the gelling capacity of Pectin. Use in jams, fruit spreads, lemon tart, sorbet and mousse.

Suggested Dosage is 10g per kg
