SOSA Free Air Bag Powder is a mixture of tapioca and kuzu starches designed to create light, crispy, and airy textures when prepared correctly. Perfect for innovative pastry, snacks, or culinary creations, this powder transforms liquids into delicate, crunchy elements after drying and frying, allowing chefs to add playful textures and modernist techniques to their dishes.
Mode of Use
Mix the powder with the desired cold liquid and bring to a boil, stirring constantly until smooth. Roll out the mixture to 1–3 mm thickness or shape as desired. Dry for 12 hours at 50 °C, then deep-fry at 220 °C for approximately 5 seconds until crisp and airy.
Dosage: 200 g per liter of liquid.
